    Recipe: Pollo Chicken Tinga

    I really wanted to make this as written, but didn’t have any guajillo peppers. Instead, I used a couple of New Mexico chiles. I’m not sure what affect that had on the outcome, but I loved it just the same. Normally, tinga is so spicy hot that I can’t eat it. Even though this was very spicy, I could handle it without any problems. My one mistake was that I added too much liquid to the shredded chicken despite reading the directions that said to add a little at a time. I topped with all of the recommended toppings except I used Colby/Jack cheese instead of cojita and sour cream instead of crema. My favorite thing about this recipe is squeezing the lime juice over the top. Such an authentic flavor! This recipe has definitely replaced my old one and I see no need to look any further.     Bakerme, thank you for commenting on the color combo. I did that intentionally thinking it would look cool. After taking the photo, I wasn't happy with it because I thought the food got lost on the plate. I'm really terrible when it comes to matching colors and have often thought about taking a class or something. If not for food photos, to help with home decor. lol!

    Sharebear has great recipes, everything I've made of hers has turned out delicious. I think the photo is AMAZING!! I too wouldn't mind taking photo class or something, sounds like it would be fun :)

    I've made a couple of Sharebear's recipes, too. They always turn out great. I really love the photo. Its nice when a recipe has some color to it to add to the photo quality. Beautiful.
