Pomegranate Glazed Chicken

    Pomegranate Glazed Chicken By: Keni

    I made this using various chicken pieces (white & dark), one large shallot and subbed some honey mustard for the powder b/c I was working in my dad's kitchen & couldn't find it (if he had any). I also had to leave out the oyster sauce and worcestershire for the same reason, but added in some low sodium soy sauce. I used homemade harissa paste for the hot sauce.
    I poured the chicken and marinade into a large aluminum pan, covered, and baked at 350F for an hour. I didn't have time to go back and do the glaze with reserved marinade step. The skin of course did not crisp up this way but the chicken was flavorful, succulent and got rave reviews.
    I was unable to take a photo of it this time around.

    Mml2c, Yes, has anyone heard how Keni is lately? I hope she is just on vacation or something? Pom juice is usually kept in cold in the produce section of our grocery stores. Lately I have noticed it in the cold juice section too! Here is a link to show you what it looks like. You might not notice it readily as it comes in an unusual little bottle. I hope this helps:)

    ML2C, Joce took the words off my fingertips ;-) My dad keeps pomegranate juice in the house usually, to put a splash in a smoothie here & there as it is so high in antioxidants.

    Joce, thank you!! It really wasn't very spicy, the amount of spice compared with the amount of marinade was not very much but you can totally gauge it to your tastes & preferences!
