Potato-y Cheese Soup

    I threw this in my slow cooker in the morning, ran my errands, and came home to a delicious smelling house! I pureed mine as smooth as I could get it. My arm even was starting to hurt lol! I didn't listen to your directions cause I was being stubborn and threw the cream cheese in cold. Wish I would have listened to you. It never would fully melt and there were small pieces throughout the soup. Didn't hurt the taste, just the look. Topped mine with extra cheese and some green onions for color ;) 5 stars!

    You know that I use cream cheese in a lot of creamy cheese dishes because it helps with smoothness and flavor/texture when you don't use processed cheese .... and, I learned the hard way that those lil bits of cream cheese are STUBBORN! hehehe ... anyway, it's fine, cus, like you said, it doesn't change the flavor, but it's just not as pretty to look at, I guess.

    I'm just glad you enjoyed it. Especially using the slow cooker like I had intended. I LOVE the slow cooker for all day stuff, but I have been trying to utilize it more for things like this. Just to cut down the hands on time a bit, even when I am home.

    I'm a lil slower than I used to be, and tire out much faster ... so, this works for me, but am hoping it works for busy "stay at home"ers, too!

    Lol MrP I alway forget to take out the cream cheese! I always find myself nuking it a little on defrost to get it soft. In this case I really thought it would melt eventually but it just wouldnt. Oh well I learned my lesson ;)
