Prize Butter Bars

    I used the ingredients listed, but switched up the mixing and baking methods a bit to make a yummy treat we really liked. I mixed the flour and sugar for the crust, then cut in the butter as you would for any kind of pie or bar crust. Lowering the baking temp to 325, which I do for all bar recipes I make, keeps the edges from overbaking before the center is done. A generous sprinkling of sliced almonds over the top before baking made these more visually appealing and added a nice little crunch. With my changes, I would definitely make these again!     Ml2c, I'm not a huge coconut fan at all, but these didn't have an overwhelming coconut flavor. I used unsalted butter in the crust, so also used the salt called for. If you're using salted butter, I'd omit the salt. The almonds just added some nice visual interest, as the bars looked a little "naked" before putting them in the oven. Since the 3 oz. package of cream cheese has been discontinued, I found it annoying to have to use only 3 T. of an 8 oz. block, so next time I'm going to try using half the package, so I have enough left for another batch. Other than schmearing it on a bagel, there's not much you can do with 2 oz. of leftover cream cheese.

    You can just leave another comment and I believe you can rate it then. "Whoops I forgot to rate it" should do. hehe :-D You can also rate it on those stars underneath the recipe poster's avatar on the right. Just click on the appropriate star.

    Google Chrome. It still wouldn't let me add stars to my original review, but NOW the review part with stars is working, so I just entered another post like I was writing a new review. And now BOTH comments have stars! Weird.

    I made the butter bars again today using 4 oz. of cream cheese, half the 8 oz. package. The bars came out perfectly again, so I'm going to do that from now on. I'm sharing them with friends, so I hope they like them as much as we do!
