How to make it

  • Beat together the first 5 ingredents til particles are fine.
  • Take out 1 cup for topping & save
  • Press rest firmly into a greased (9x13) pan
  • (DO NOT BAKE YET)
  • Combine cream cheese, butter, br sugar & coconut. Beat well
  • Spoon here & there over mixture
  • Bake @ 375 for five minutes
  • Spread topping to cover.
  • Sprinkle with remaining crumbs
  • Bake 25-30 min. or until light brown

    I used the ingredients listed, but switched up the mixing and baking methods a bit to make a yummy treat we really liked. I mixed the flour and sugar for the crust, then cut in the butter as you would for any kind of pie or bar crust. Lowering the baking temp to 325, which I do for all bar recipes I make, keeps the edges from overbaking before the center is done. Sprinkling sliced almonds over the top before baking made these more visually appealing and added a nice little crunch. With my changes, I would definitely make these again! I Made It UPDATE: I made these again using 4 oz. of cream cheese (half of an 8 oz. package) and they were just as good as the first time around. Using half the package means not having 2 oz. of cream cheese left and nothing to do with it, so I will do that from now on.
