Pumpkin Risotto

    I made this last night finally. The recipe is good. I think leaving out Parmesan as a MUST is a huge mistake for pumpkin risotto as it is really bland without the nice pungent flavor you get from a great Parmesan.

    I think each and every step in a risotto is important because you have a chance to add some flavor. I saute my shallots in unsalted butter. Don't substitute the wine.

    I would recommend flavoring in layers. I would add some salt to the pureed pumpkin. Not a lot, but a little and obviously finish the dish with salt too.

    I know I'm kind of picky about Italian dishes, but I lived there for 3 years and you get that mentality. Italians are pretty picky about how food is prepared and have cardinal rules. LOL Some of it rubbed off on me I guess.
