Raspberry Vinegar and Rosemary Chicken

    This is a fantastic chicken recipe! It's so easy but taste and presents as if it took forever! I used a white balsamic raspberry vinegar and went ahead and cooked my onions about 10-15 minutes to get them more caramelized. I added just a touch of salt and the flavor of this is SO GOOD! Definitely use CI (if you got it) as the recipe recommends.

    He's doing okay. A little hard to handle since he can't do much. His cast smells like freaking hell! UUghhh... it's unraveling, discolored and STINKY! Anyway, he only a week to go (off next Thursday, YAY) and yes I posted the pic (one from early on when the cast was clean)! Sorry, I forgot!
