    This took me back to my visit to Prague where I ate delicious noodle pudding. So easy and quick to make and a great side to many meat dishes! True comfort food.

    Didn't really understand why it was necessary to cover the onions after they were cooked, so skipped that step..made sure the pasta was really dry by putting it back in the pan where it was cooked and placing it back on the still warm burner to evaporate any remaining liquid. Just be sure to keep it moving so it doesn't burn and stick! And while I left the onions in slices this time, I would recommend dicing as the recipe says.

    Covering the onion helps it go limp from the residual heat and steam from the saute process. Covering the pasta after it is mixed with the onion and the cottage cheese added, helps the cottage cheese go creamy a little, also from the residual heat.

    That's the only thing I could figure. I did cover after adding the cottage cheese so it would get more melty, but I sauteed the onions long enough that they WERE soft and limp. In fact, I think that when I make this again I will saute them even longer until they are a bit brown and caramelized.

    Sliced onions visually compliment the tube type pasta. The diced onion probably compliment the sea shell type pasta.
    This is on my list to make today if I can get some residual canning completed.

    Yes! Got 7 quarts out of the first batch. They're on the counter cooling. Now on to make some applesauce, cinnamon and plain, and some jelly and jam. Bought 3 bushels from the orchard Friday. Took 2 days to make the applebutter. A lot of low and slow simmering to get it to caramelize just right.
    But first I'm off to the store for the ingredients for this pasta dish.

    Quick and easy to make. Doubled the recipe without trouble.
    Can't really see the diced onion and garlic in the mix but the sweet savory flavor imparted is there.
    Didn't saute the onions until transparent. Just can't see it. : ) Did saute them until translucent though.

    I don't measure unless I'm baking. :) So my pic could reflect different proportions than what the recipe says. I probably used more onions and less pasta.
