Ingredients

How to make it

  • Boil the shell pasta according to the package directions in salted water.
  • Melt the butter in a heavy pan or skillet that has a lid.
  • Saute the onion until just transparent, add the garlic, stir and remove from heat.
  • Add salt and pepper to taste.
  • Cover tightly.
  • Drain the pasta VERY well and add to the skillet, stirring the onion and garlic through it. If the pasta or onions have cooled, you may stir this mixture over med-low heat until steaming.
  • Add 2 cups cottage cheese, stir gently.
  • Place lid on tightly and remove from heat.
  • Serve immediately.
  • The cheese in this dish makes a creamy mellow sauce for the pasta without melting and getting stringy IF you don't let it cook after the cottage cheese added.

    WOW! I was surprised (and glad) to see new posts about this recipe. I've never had a recipe discussed before. *LOL* As for why I cover the onions after adding the garlic is to let the garlic flavor come out without really cooking and to keep them warm. I have a tendency to overcook garlic and it always seems bitter to me when that happens. This dish really seems to suffer if that happens. (speaking from my own experience) Same thing if I sauté the onions until brown. I live in the country and have the opportunity to get homemade cottage cheese. We love the taste of it and if you ever get the chance to make this with the real thing, you'll be pleasantly surprised. Thanks for your interest.

    Except for the onions & garlic, my Hungarian grandma made this dish for me growing up. We both use broad egg noodles.It's one of my favorite quick dishes. Thanks for sharing your version. :)
