Santa Fe Soup

    This was great and so easy! I only used about 1 1/2 lbs. ground beef and left out the pinto beans. Also used frozen yellow corn. This had perfect flavor and it was inhaled by the whole family :) Oh cooked on the stove top for about 2 hours.

Also, did you drain your beans? It sounds like you aren't supposed to, which gives me the willies. :-D Looks easy enough to halve, too.

    Thank you! Yes, I ALWAYS drain AND rinse the beans! I can't stand to think of that icky, thick juice going into my dinner. Also, it doesn't taste like there is a bottle of ranch dressing in the soup at all. Not that long ago I used Ranch seasoning in something and I liked it, but I was worried about the amount this time, but it worked out great, but I forgot to mention that I did add an extra cup of water :)

    I wondered about the Ranch dressing, too, and whether there is a good sub for it. My husband is lactose-intolerant and, even though he can tolerate small amounts of some dairy, Ranch dressing triggers a terrible reaction.

    I would bet, Bakerme, that you could leave out the Ranch but probably only use one packet of taco seasoning. I have a feeling the Ranch cuts some of the taco spicy somehow. Just a theory, but there's some reason for that Ranch.

    Thanks, Frankie and Michelle! I always rinse canned beans several times, not only to get all the gunk off, but, even with the reduced sodium variety, to get as much salt as possible off, too. I was kinda leaning toward just omitting the ranch and the tomatoes with chilies (I can't do spicy food). Since I halve a lot of recipes for just the two of us, one can of the regular diced 'maters would be enough. I never buy spice packets, so would have to wing it for the taco seasoning. Michelle, your mix looks good!

    AWESOME photo! Love the colorful background! This looks really good! Maybe comparable to a taco soup? I have a similar one that uses a pkg of ranch dressing mix and hominy. I like the addition of black beans and Rotels in this particular recipe.
