Sausage Rigatoni In A Tomato Cream Sauce By: Katerina
I used about 1 cup each of diced celery, carrot, and onion. I used a 14.5 oz can of diced tomatoes with the liquid. I subbed 2 chicken sausage (spinach & Asiago) diced for the Italian sausage. I also subbed half & half for the cream and used a 1/2 pound of rigatoni. Finally, I added some black pepper, crushed red pepper, dried basil & oregano. I got 4 servings out of it. It was absolutely delicious!!!! Great as leftovers as well.

That looks like it would be delicious even if you didn't add the cream! The chicken sausage you used sounds wonderful! I'll have to see if I can find some like that.

Yes it would but the cream makes it more special :) The sausages are from Sam's Club and I find a variety of specialty chicken sausages at Trader Joe's as well. There is also a brand called Aidells that I've seen & want to try.

That looks really good DT. Its awfully teeny, though. Is that all you eat? No wonder you have leftovers :)

Speaking of Aidells. I have a package of his teriyaki chicken meatballs with pineapple, ginger and garlic. They are soo good. I would like to try his other products.

I have a container of Philadelphia Cooking Creme in my fridge. I think this recipe may just be my first attempt at using it...
