  I've never had a po' boy before. There are quite a few recipes for them on this site and most of them have a mayonnaise based sauce on them. I picked this one because of the ketchup based sauce, which was very tasty. Like a cocktail sauce without the horseradish. I only could find 7" rolls so I used 3/4 of one half of the recipe for my sandwich. :-)
