Simple Pinto Beans

    Recipe by Campcookie: Simple Pinto Beans
    A good bean dish. Well seasoned and satisfying, even without bacon or salt pork.
    I did try a new soak procedure with these beans. Soaked them in a brine. Saw it on America's Test Kitchen. Rinse after the soak. Supposed to make the skins softer so the water can get to the bean.
    Took 4 hours to simmer, and with the salt in the garlic paste, the beans had good flavor.
    Doubled the recipe without trouble.
    Couldn't help myself and threw in a quartered up onion and a couple of star of anise.

It just seems like beans should have onion. Thanks for putting this here. I may have to try it. I like beans and especially when its cold outside.
