Simply Simple Salmon Cakes

    Used about 4 oz of left over salmon to make these delicious cakes for lunch! Obviously I was making these for 1. The instructions leave some to be learned. I used probably close to half cup bread crumbs and got 2 good size patties. They held together pretty well considering I did blend but not well. My blender does not blend good with such a small amount. Also skipped the refrigeration. Very tasty cakes! I did not have the artichokes so I used only the onion and some cherry tomatoes quartered. They went well! Also felt the need to make a sauce. I did mayo with lemon juice, s&p. I don't really think it was needed though since the onion/tomatoes go so well. I highly recommend this for left over salmon!

    That looks interesting. I never would have thought of tomatoes or artichoke hearts in a salmon cake. But, then I'm not certain I've ever had a salmon cake! :) Looks good and I love the picture.

    Actually Frankie the tomatoes, onions and artichokes are like a side dish to the fish cakes. Good idea to use the same pan for both though and it was a great fresh side item (or maybe they were to be served on top, not sure). Really wish I'd had the artichokes, I was really looking forward to them and swore I had some! I checked my fridge over and over lol! They were never there!
