These are so healthy and so easy to prepare. Soft inside...crispy outside and serve with fresh made tartar sauce. Can't beat 'em.

Ingredients
  • 1-2 lbs fresh or frozen salmon
  • 1/2 large sweet onion
  • bread crumbs (homemade are best -made from enriched bread and seasoned to your liking)
  • eggs or eggbeaters
  • oil and butter for frying
  • =======
  • frozen artichoke hearts
  • grape tomatoes
  • sliced sweet onion

Directions
  1. Place salmon in blender with onion
  2. remove to bowl
  3. add bread crumbs until the right consistency
  4. using a small kitchen scale, make 4 -5 oz patties
  5. dip in egg
  6. dip in breadcrumbs
  7. place covered in fridge for at least an hour
  8. place oil in pan
  9. add artichokes, tomatoes and onion
  10. fry on med to med high heat
  11. add patties
  12. til crispy on outside
  13. that's it....enjoy!
