Ingredients

How to make it

  • Place salmon in blender with onion
  • remove to bowl
  • add bread crumbs until the right consistency
  • using a small kitchen scale, make 4 -5 oz patties
  • dip in egg
  • dip in breadcrumbs
  • place covered in fridge for at least an hour
  • place oil in pan
  • add artichokes, tomatoes and onion
  • fry on med to med high heat
  • add patties
  • til crispy on outside
  • that's it....enjoy!

    These are delicious salmon cakes. Needs amount of bread crumbs though at least in the directions. I used somewhere between 1/4 to 1/2 cup fresh bread crumbs for 4-5 oz salmon. Meant to use the artichoke but realized after the fact that I was out. Regardless this was a great lunch!!! Thanks Mystic!! 5 stars! Simply Simple Salmon Cakes
