I posted this last night and it disappeared. It will probably reappear after I post this one lol! I made this a couple days ago on a busy "fend for yourself" night. I found a HUGE potato and cut it in half to make this for just myself. I love microwaving potatoes, they always come out a nice texture and SO much quicker than the oven. Used parsley cause that's what I had. So good!
