Recipe by Gkwillow: Sour Cream Kluski Noodles
A nice pasta dish. Parmesan and green onion flavors go together well.
I started out researching exactly what Kluski noodles were. Turns out they are egg noodles and also a brand name of the noodles. Found directions to make my own noodles so I made a batch. Rolled them out by hand, not using one of those very expensive rolling machines that look like the upper portion of a wringer washer. Guess I'm showing my age. It was a lot of fun except for the extended kneading time. They turned out well and I have learned a new skill. Don't think I'd make them again as the semolina flour is too expensive. I'll just buy the premade noodles from now on, although fresh noodles cook a lot quicker than the dried store brands.
    Doubled the recipe without trouble.

Thanks PSO...glad you liked it. Thanks for starting the thread and adding your pic here.

I admire your curiosity and willingness to research kluski noodles and make them for yourself...BUT I have to say that I will just stick to buying them. ;)

The homemade noodles start out yellow but quickly turn the standard creamy white color when added to hot water.
I only used half a batch of the dough, so have the other half waiting in the wings in the fridge. Might even use them to try my hand at ripiena or agnolotti or cappelletti or manti or pansotti or ravioli or tortelli or tortellini or tortelloni. They are all a stuffed pasta. Ravioli looks the easiest.
