    A good pie. Apple and cheesecake flavors.
    My apples had a springy quality when chewing them in the final product. Think they were Braeburn and fully ripe.
    Recipe didn't say what size pie plate to use. I did a 9" deep dish plate and it was full to the brim. Had to use a baking sheet to get it into the oven without spilling. Anyone else making this pie should use a larger pie pan. The baking sheet is probably a good reason I had to increase the bake time to 1 hour. It was very jiggly and the toothpick test came back with goo on it at 45 minutes. A little better with 10 additional minutes, with jiggly center like one would expect using a water bath. A clean test with another 5 minutes and hardly any movement.
    Used King Arthurs Favorite Pie Crust Recipe/saved for the crust. Left out the baking soda and vinegar ingredients (oops).
    Cream topping whipped up nicely. Left out the nuts 'cause we didn't have any.
    Used creme fraiche instead of heavy cream for an additional dimension. Whipped it up nice and thick
    I would make this again using a larger pie pan and maybe a different apple.
    The recipe needs a little more detail to clear up my troubles.
