    SASSY, delicious, outstanding recipe!
    First off, I had a red onion reserved for this but couldn't find it. Had to use a yellow.
    Secondly, couldn't find the hot tomato sauce (I did have it) so used several dashed of Louisiana hot sauce in some regular tomato sauce.
    Used quartered up golds. Have used that Cotiga before and didn't care for it so I subbed Parmesan. Took the whole 45 minutes to bake.

    ya know, I have confidence in my cooking ability and even my creativity in the kitchen, but it's the recipe creating process and getting it right "on paper" that gives me any hesitation.... cus, like SO many others, I am a lil of this and a lot more of that kinda cook...

    I am VERY glad I started comin' to this site...it's forced me to write this stuff down after it comes outta my head and into a pan or pot! :) I don't do many "repeats", but it's still fun for me to see what I've done, before...other people trying, and especially LIKING something is a huge bonus!

    as for subs and subtracts...... nothing wrong with that. For tastes or money or dietary needs or desires....whatever.... the ideas are the bones of a recipe!
