    Recipe by Eirine: Spanish Potatoes With Sausages
    A nice side dish that is open to interpretation. Recipe is nebulous on the type of sausages. I used a mild Italian sausage as opposed to sweet or hot or breakfast patties or links.
    Skinned and sauteed them up. Five links to my sausage package totaling 1 1/4 pound.
    Used 3 large potatoes 'cus that's what I had. Left the skins on for a more rustic look since the sausage was coarse chopped.
    Made my own tomato puree because of the small amount called for. Who opens up a can of pureed tomatoes just to fetch 1 tablespoon! Pureed 1 Roma tomato that made about 2 tablespoons, so I doubled the sauce portion of the recipe.
    Used sausage rendering to saute the onion and simmer the sauce.
    Looked like enough to casserole up in a 9x13 dish and garnish with the cheese.
    Warmed all at 350F for 15 minutes.
    Seek out the salt shaker. Those potatoes will suck it up.

    Thanks for the tomato puree tip. I know puree is different from sauce or paste, so I think what you did is a great idea! Nice plate of food. Glad you're posting pictures again.
