How to make it

  • I start by frying the sausages until they're cooked, chopping into bitesize pieces and setting aside.
  • I sauté the potatoes by boiling until almost cooked and then frying in butter until browned.
  • Meanwhile, I make a spicy tomato sauce by frying the garlic and onion until soft; mixing in the tomato purée, balsamic vinegar, paprika and enough water to keep it a yoghurt type consistency. Simmer for about 5 minutes
  • When the potatoes are done and the sauce is ready combine both of these with the sausages and heat through together. The sauce should coat the sausages and potatoes in flavour but not making them soggy. I also like to sprinkle a little cheddar cheese on top before serving
