Sparow64's Mexican Chicken Salad

    I've seen a few comments on recipes that say "Om nom nom nom om". And I'm going to say that for this one! Mexican Chicken Salad
    Oh my goodness it was tasty! I had a lot of leftover chicken from the BBQ and didn't know what to do with it. This was a superb idea.
    I used black beans instead of Red kidney beans as that's what I had in the pantry. I used green olives as I didn't have black and unfortunately I didn't have the can of green chilies as I bet that would have been really nice but I did pour a bit of hot sauce in instead and that gave it a bit of a heat factor so that was good.
    The sour cream, mayo taco seasoning mix was super nice and I was really impressed with the flavour. Also loved the combo of the chicken salad sitting on top of the lettuce, tomatoes and especially avocados and then with the tortilla chips sprinkled over top. Well.....it can't be beat. A-one awesome!
