    Recipe by Pink: Special Pecan Pancakes
    Used buttermilk and had to use a lot more to make the batter pourable. Used standard ladle (1/4 cup) to made 6 pancakes.
    Nice and fluffy, really soaks up the syrup.
    Interesting way the cakes cook using buttermilk. They bubble like normal cakes at the start and then quit bubbling. Uncooked dough fills in the bubble craters so you can't tell the cakes were ever bubbling. Not the normal pock marked surface made by a batter using sweet milk. You have to look at the edge of the cake for it to start loosing the batters luster for indication to turn the cake.
    Time wise it was a right at two minutes or a little over for time to flip using a medium-high burner and an omelet skillet.
    If you like fluffy cakes, this will get you there.
