Spice Pancakes

    Nice spice flavor. Quick and easy. Batter is on the thick side.
    Medium heat in an omelet pan is 4 minutes on the first side and 2 on the flip. Not as many bubbles coming to the surface as I am used to.
    Cake has a good fluff to it but not too much.
    I'm getting down to the last tablespoon in my baking powder can. The batter initially had a lot of bubbles in it. I'm wondering if there wasn't a little separation of baking powder ingredients going on and a some baking soda settled out.
    That would explain the thick batter and the bubbles in the batter initially and the lack of bubbles while the cake was cooking.

    Didn't know that either. Somehow reasoned it out. On my new can now. Using the last of the old can to make a cornbread loaf. We'll see how it turns out.
    Kinda' difficult to shake up a new can but I will remember to shake as the contents dwindle.

    Actually, my "vision" was more like plain cream cheese smeared in between the stack of pancakes with maple syrup on top-

    Is that a little less "sweet-tooth-achey" sounding? :)
