Spinach Salad in Parmesan Frico Cups

    I made Luisa's salad recently for a ladies dinner and served it with bowls of homemade stew. The women raved about the salad and were very impressed by the parmesan cups that held the greens. The baked parmesan cups, when eaten with the salad give the delicious crunch and tang that complements the greens. Make 2 cups at a time, as you must work quickly to form the baked parmesan discs into cups. It's a little tricky the first couple of times but well with the effort. This was a delicious salad and I rate it a 5 forker,,.thanks Luisa...lovely presentation as well!
