Squash with Cornbread Casserole

    This could be an alright casserole with a couple of changes. The slight use of salt and pepper makes this dish too meek. Double the seasoning, at least, to bring out more flavor.

    There is a lot of liquid that needs to be cooked off after the steam step. It will take longer than 5 minutes.

    Leaving the skins on the squash and zukes made the dish a little chewy. I've made squash casseroles both ways now. Skins and no skins. I prefer no skins. Made this dish with skins because my squash was already cut up and frozen.

    I'm not a skins persons either...when it comes to squash or especially eggplant! Its great for giving color to the dish and a lot of the nutrients are in the skin, but I always remove it too.
