Streusel Topped Pecan Muffins

    Recipe by Keni: Streusel Topped Pecan Muffins
    Muffin has great flavor but something's missing. Had to eat these with a fork out of the cups.
    I'm thinking more flour and less butter.
    Keni likes her muffins on the large side. The recipe made 2 dozen standard muffins for me.
    Being a smaller muffin, mine should have cooked in less time. There was no way a muffin was coming out of the cup without crumbling all over.
    Crossed all my eyes and dotted my tees to this recipe. Don't know what the difference is with my result and Keni's picture.
    Muffins rose and were flat topped, as in Keni's description, and spread from muffin to muffin. Made the muffin tin look like one big muffin. It's like the batter didn't have enough flour for structure for the muffin to form.
    I'm wondering aloud here, if Keni didn't get the butter and flour measures mixed up. Two and a half sticks of butter is a whole lot of butter for a dozen large muffins.
    Keni, please don't hit me with a bag of flour!
    I'll eat these all up with a fork and try again making the recipe a little different.

    It is the buttermilk...the flour/butter SHOULD be fine...even if just slightly high on the butter, but I'm sure it was the liquid that did it... because I wrote it, doubled what it should have been. I've done this before...many I catch, or my boyfriend does, but others, I don't, and that's TOTALLY on me.

    The muffin are not pretty... not by a long shot... that's obvious from my photo... but by decreasing the liquid, this should solve your spread problem, as well....not that I expect you to bother trying them, again! :)

    Anyway, as always, I appreciate your honest review... I wouldn't have known something was wrong without it... now, if you do make them again, with the edited buttermilk, and still not at least as "good" as the photo, THEN I might grab the bag of flour...
