Twice Baked Potato Casserole

    Had the Twiced Baked Potato Casserole
    as our side dish for dinner last night. Everyone really enjoyed it. I made a few adjustments to it - used Yukon Gold potatoes, rather than what I assumed to be russetts (since recipe calls for 6 - must be larger size like a russett). Also, cut back on the sour cream, it just seemed like way too much. Also cut back on the cheese (not too much, my guys LOVE cheese!) and the bacon. So, ended up chopping about 12 precooked YG potatoes for 1st "layer", added bacon (12 oz) and a heavy 1/2 cup monterey jack cheese (used all my mozzarella Sat. night) and about 6 heavy tablespoons of sour cream. Topped that with about 10 more chopped precooked YG potatoes and finished with 1 & 1/2 cups cheddar cheese. Kept the garnish and seasonings the same. Delish!
