Unstuffed Squash Casserole

    Good flavor. Tastes like turkey stuffing.
    It is a little mushy and squats some when plated but there is no liquid in the dish. Think I would prefer a little more chew to it. Maybe you could add a couple/three eggs in there to help it sit up in the dish when plated. If done, one would have to temper the eggs in the cream and broth mix before adding it to the veggies.
    And, of course, I used Ritz crackers! Sorry no nuts, we're out for this year.
    Fits in an 8x13 casserole dish with good room.
    Mother says" That was good" in hushed tones, as if someone else would hear and make a bee line to it and polish it off before she could get another helping.

I don't think I would use nuts or eggs in this recipe. When you mentioned the eggs I immediately thought of a quiche and a more solid textured dish. Each to his own tastes I guess? I will give this a try when squash is more readily available and the price is right.

    Yup, eggs would certainly work to hold it together a bit more ... no question about it. I was specifically avoiding eggs in it, but not gonna offend me to add em! hehehe
