Whole Roast Chicken with Persian Flair

    Very good chicken. All kinds of flavor going on here. I had a big roasting chicken that took 2 hours to complete baking. Almost couldn't wait for that little temperature thingy to pop-up out of the breast.

    Breast was juicy and tender. Don't know about the lower quarters. I suspect it is just as good.

    Served it up with turmeric rice with dried cranberries and raisins to be consistent with the turmeric rub for the chicken.

    Made a pic. Forgive the butchered chicken. I cut a breast off before realizing there was no picture for the recipe.
