Zucchini Bread

This is the best zucchini bread I've ever made! No need to add butter to slices because it has enough flavor all on its own. Here's the recipe and my review, and I even got the star rating to come up this time:

Yum. Zucchini bread. I haven't had that in a while. Did you put nuts in it? I like stuff nutless myself.

No, no nuts. My husband doesn't like "stuff", as he calls it, in his food, but I love chopped pecans in banana bread, chocolate chip cookies, and zucchini bread. I used to put nuts in brownies, but after making them without for him all these years, I now prefer them without, too!

Do you think fresh summer squash will do OK for zucchini?
Is wrapping important if eating fresh or is it just for keeping the loaves?

I have never made zucchini bread before! I'm surprised since I always have loads of that stuff from my garden in the Spring. This one sounds good! Thanks for sharing Bakerme :)

Points, I put one loaf in a Tupperware container for us to eat now, and wrapped the second loaf in aluminum foil before putting it in a ziploc bag in the freezer to have another time. I've never used summer squash as a sub before, so don't know if it works and don't want to tell you the wrong thing by guessing. Maybe you could start a post and someone who knows for sure can help better than I.

Lucky you, Ml2c, to have your own homegrown zucchini. I buy it from the store since no one I know grows it, so I have no one to beg a few from - lol!
