    Zucchini Greek Way by Monik from Athens, Greece

    Monik should know about Zucchini Greek Way, but now it's Zucchini My Way! This gets 5 stars from me for ease of preparation and great taste. Monik suggests using everything fresh if possible, but I only had one small Roma tomato so used that in addition to a small can of tomato sauce for two small zucchini. And so because of using sauce, I skipped on adding any additional water.
