Zucchini Greek Way

- 750 gm medium size zucchini washed n peeled cut into small cubes shopping list
- 1 medium onion finely chopped shopping list
- 2 medium tomatoes finely chopped shopping list
- 3 cloves of garlic shopping list
- salt n pepper to taste shopping list
- few strig of parsely n fresh oregano or a pinch of dry oregano shopping list
- 3 tbsp olive oil shopping list
How to make it
- Heat the oil and saute onion n garlic then add tomatoes and let them get little soft this will take 2-3 mins
- Then slowly add Zucchini to it and mix well add 1 1/2 cup of water to this and let it boil for atleast 5-8 mins on medium to low flame
- Then add salt n pepper to taste .... and parsely n oregano ... stir one more well cook for another 2 mins and close the heat
- Serve with feta n fresh bread !!!!!
- Tip :
- Many vegetables can be added in this recipes like potatoes/ carrots/ eggplants/ bell pepper n most of time instead of finely chopped onions i put roughly chopped onions
- If u dont have fresh tomatoe u can use tomato puree or canned tomatoes ... but I always prefer fresh !!!!!
- I even like to add some red chilly powder or 2-3 whole red chillies .... or some cummin seeds while sauting onions n garlic it all depends on ur taste ...
- Above mentioned recipe is typically made in every greek home in summer .....Its called Giaxni ....
