Pork chops, brown rice, artichokes and feta cheese

    I guess it's my turn to give you 4 ingredients. Hmmmmm. Okay: Thin center cut pork chops, brown rice, artichokes and feta cheese. Ooooh. Tough one! Have fun with this!

    4 Center cut pork chops
    Italian style bread crumbs
    2 eggs
    4 tablespoons of water.
    Olive oil for frying.
    FILLING:
    1-cup brown rice
    4 artichokes from a jar rinsed and rough chopped
    4 ounces of feta cheese.
    BEDDING:
    Cabbage leaves steamed
    melted butter

    Pound the center cut pork chops thin between plastic wrap.
    Bring 2 cups of chicken broth to a boil.
    Add rice and lower heat to simmer.
    Cook the brown rice in chicken broth until broth is absorbed about 30minutes, fluff with a fork and set aside to cool.

    I a bowl combine the artichokes, rice, and feta cheese and mix until blended.
    Lay a chop down and place a small mound of filling in the center and roll chops.
    Coat rolled stuffed chops in egg wash and then in breading, secure with tooth picks.
    Fry in olive oil until browned.
    Serve on a bed of steamed cabbage leaves with butter.
