Vegetable scraps

    As I'm cooking over the course of a week, I accumulate a lot of vegetable scraps. Granted, I can't use all of them, but I throw many of them into a pot with water, herbs, and other seasonings to make simple vegetable stocks.     Often when I have leftover veggies from dinner, I end up putting them into the next night's dinner somehow.

    Last night I made Smoky Baked Beans (http://www.grouprecipes.com/22767/julies-smoky-baked-beans.html) and ended up stirring my collard greens into the beans as I ate them. So when putting away the leftovers, I went ahead and put the collard greens in with the beans and when we have them later no one will be any the wiser. ;)

    There are things that won't go into the compost, like meat trimmings and bones. I'm not UP on all the little nuances of keeping a good compost heap but have read over the subject a couple of times and almost taken the plunge.
    To my suprise, a well kept (turned) compost heap does not smell.
    For those of you who do keep an outdoor herb or vegetable garden or have the space for them, a compost heap should be your cup of tea. Plenty of info out there in the net for building your own heap.
