Freezing veggies

    I need to know if I can freeze peppers....My guy came home with 10 peppers and I don't know how to freeze them if I even can.....ALso, speaking of freezing, can I freeze asparagus?...ANy help would be greatly appreciated....:)

    Hy wynne, rml. I freeze bell peppers all the time. Red, green, yellow. Just clean them and slice into strips. I freeze them on a cookie sheet and then put them in a plastic freezer bag. I just take out what I need for my recipe and chop them if I need to. We're not big pepper eaters, so a whole one will go to waste. This way I freeze the leftovers. I've bought them on sale just to put in the freezer also. Sorry, can't help you with asparagus. Can't tell you the last time there's been any in my kitchen.

    mbalmr - I'm with you on raw celery. Have never developed a taste for it, but LOVE it cooked in soup. I freeze celery all the time. The best way is to freeze it is in ice cube trays. Chop it up into smallish size pieces (even the green leaves, if you want) and put it into the segments of ice cube trays then carefully fill with water. Freeze solid then put the cubes in a large plastic freezer bag. As you need it, use how ever many cubes that you need for your soup. I do this with carrots too if I hapen on to an excess. I do eat them raw. This method keeps the celery from freezer burn, which it's very suceptible to. The day I learned of this was a great day. I've always got celery for soup in my freezer!
