Elexus Margarita Chicken Skewers

- 1 1/2 pounds skinless, boneless cihcken breasts, cut into 12 strips shopping list
- 1 10-ounce can frozen maragarita mix, thawed shopping list
- 2/3 cup tequila shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 2 tablespoons chicken seasoning shopping list
- vegetable oil, for the grill shopping list
- and for added presentation some baby arugula and lime halves shopping list
How to make it
- place the chicken, margarita mix, tequila, cilantro and chicken seasoning in a large resealable plastic bag; squeeze out the air and seal.
- Massage the bag to combine he ingredients.
- refridgerate for 40 min. to an hour. Meanwhile, soak 12 wooden skewers in water.
- Preheat a grill to medium. Remove chicken from the marinade; thread each piece onto a skewer.
- Oil the grill grate; grill the chicken skewers for 3-4 minutes per side, or until the meat is cooked through.
- serve on a platter wih the arugula and lime.
