Ingredients
  • 4-6 cod fish steak or similar firm white fish
  • 2 red or yellow onions chopped
  • 4 cloved of garlic finely chopped
  • 4-6 roasted pimento or roasted red peppers seeded
  • 2-3 c hillies finely chopped
  • 12-16 pimento=stuffed green olives
  • 1 carge can crushed tomaotes
  • 1/4 cup dry sherry
  • salt to taste
  • flour for coating fish
  • 4-6 tablespoons virgin olive oil

Directions
  1. Roast pimento or red peppers in oven for 20 minutes at 425 deg
  2. peel them when cooled and deseed them and cut them in long thin slices
  3. coat fish on both sides with flour
  4. heat oil in deep and wide skillet.place fish and brown lightly on each side for about 2 minutes each.
  5. take fish out. . throw olives in and saute for few minutes add chillies
  6. and for further 2 minutes on medium heat.
  7. add onions and garlic and cook for few minutes till oniions are soft
  8. add crushed tomatoes .cook for about 4-5 minutes.add sherry and pimentos and cook for further 3 minutes. add fish and scoop some of the sauce mixture on top to cover.
  9. cook for 2-4 minutes coverd.
  10. good quality baquetes or crusty bread......

Aside from salmon and halibut - cod is a family favorite. This sounds lovely with all the spices and flavors. We will definitely be making this one!
