Fish Steaks Almeria

                    - 4-6 cod fish steak or similar firm white fish shopping list
- 2 red or yellow onions chopped shopping list
- 4 cloved of garlic finely chopped shopping list
- 4-6 roasted pimento or roasted red peppers seeded shopping list
- 2-3 c hillies finely chopped shopping list
- 12-16 pimento=stuffed green olives shopping list
- 1 carge can crushed tomaotes shopping list
- 1/4 cup dry sherry shopping list
- salt to taste shopping list
- flour for coating fish shopping list
- 4-6 tablespoons virgin olive oil shopping list
How to make it 
                    - Roast pimento or red peppers in oven for 20 minutes at 425 deg
- peel them when cooled and deseed them and cut them in long thin slices
- coat fish on both sides with flour
- heat oil in deep and wide skillet.place fish and brown lightly on each side for about 2 minutes each.
- take fish out. . throw olives in and saute for few minutes add chillies
- and for further 2 minutes on medium heat.
- add onions and garlic and cook for few minutes till oniions are soft
- add crushed tomatoes .cook for about 4-5 minutes.add sherry and pimentos and cook for further 3 minutes. add fish and scoop some of the sauce mixture on top to cover.
- cook for 2-4 minutes coverd.
- good quality baquetes or crusty bread......

                		Aside from salmon and halibut - cod is a family favorite. This sounds lovely with all the spices and flavors. We will definitely be making this one!
