Party Size Marinated Mushrooms

- 4 lbs. mushrooms shopping list
- 1 C. onions, finely chopped shopping list
- 2 C. salad oil shopping list
- 3/4 C. distilled vinegar shopping list
- 3 tsp. salt shopping list
- 1 1/2 tsp. pepper shopping list
- 2 Tbs sugar shopping list
- 2 Tbs chopped fresh tarragon shopping list
How to make it
- Clean mushrooms.
- Saute onions in oil until transparent.
- Add mushrooms and saute until half-cooked.
- Add all other ingredients.
- Cook until liquid is reduced by half.
- Remove from fire and let cool in own juices.
- Store in glass or stainless steel container.
- Drain before serving.
- Store covered in refrigerator
