CHICKEN WITH LEMON AND GARLIC This recipe came from an estate sale. I obtained it when I purchased the family collection from the Victor Estate in Allen, Texas in 1981.

Ingredients
  • 3 pound roasting chicken
  • 4 tablespoons extra virgin olive oil
  • 6 peeled cloves garlic
  • 1 small lemon cut into quarters
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup white wine

Directions
  1. Preheat oven to 350 then place chicken in an ovenproof dish.
  2. Add all remaining ingredients and place on cook to burner.
  3. Bring liquids to boil then cover with a lid and transfer to oven and bake 75 minutes.
  4. Carve chicken and spoon liquid from pan over the top.
  5. Garnish with cooked cloves of garlic and lemon wedges then serve immediately.
