How to make it

  • Mix together the butter,Dijon,garlic,red onion,fresh herbs,salt and pepper.
  • Place roast in pan.
  • Cut several slits,through the fat.(I usually slice into the beef for some of the pockets to receive the butter mixture.. up to the second knuckle of index finger.)
  • With your fingers,place the butter mixture within these slits.
  • Spread remaining butter mixture all over the roast.
  • Place in a 450 degree oven for 15 minutes,lower heat to 350 degrees and roast for 1 hour.
  • Remove roast from oven,cover with loose foil,and allow to rest,to bring the juices to the center of the meat for about 20 minutes.
  • Slice and serve with favorite Green Vegetable,Salad,Nice Red Wine and Champagne Mousse.

  • A Spencer Roast...is essentially a Boneless Rib Eye Roast...substantial...generously marbled...tender cut...juicy and flavorful.
  • Kobe is an expensive marbled beef from Japan very delicious,but somewhat capricious.
