How to make it

  • Salt and pepper the trout,in a glass dish.
  • Mix the Olive Oil and garlic ,rubbing this over fish.
  • Place in refrigerate overnight.
  • In pan,combine,clam juice,wine,garlic,herbs,saffron,and tomatoes.
  • Cook and reduce this by half.
  • Place in blender,and blend until smooth,add cornstarch,blend,then slowly add the butter,process until well combined.
  • Place sauce over heat and cook,stirring,until thickened slightly,add the hot sauce.
  • Place trout skin side down on grill,cover,and cook for10 mintues,or until flaked.
  • Serve with sauce.
