Ingredients
  • 2 cups dried chick peas, soaked in water overnight
  • 2 tablespoons cilantro
  • 2 tablespoons parsley
  • 1 small onion, chopped
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon minced garlic
  • 2 tablespoons lemon juice (or lime)
  • Pinch salt and freshly ground black pepper
  • 3 tablespoons grapeseed oil, for searing
  • 4 flatbreads
  • Arugula or lettuce
  • tomatoes
  • Red onion, sliced thin

Directions
  1. Heat a grill pan until hot.
  2. Drain the chick peas. Place in food processor along with cilantro, parsley, onion, cumin, cayenne, garlic, lemon juice, and salt and pepper.
  3. Pulse until well blended. Consistency should be in the form of a paste.
  4. Place mixture in a bowl and form into 2-inch patties. If dry add 1 a bit of water. If too wet, add flour.
  5. In a large skillet over medium-high heat, add grapeseed oil.
  6. Add patties and cook for 3 to 4 minutes on each side.
  7. Remove from pan and place on a paper towel lined platter to drain.
  8. Add 2 to 3 patties to each flatbread. Top with some arugula, tomato, onion

I once made falafel from a mix, did not care for it. This recipe sounds much more flavorful, and I like patties better than balls. Will try this soon. Thanks for the post!
