Spicy Salmon Cakes

- 1 sm. zucchini shopping list
- 1 c. carrot shopping list
- 1 (7 3/4 oz.) can salmon, drained & flaked shopping list
- 1 1/2 c. white bread, cubed shopping list
- 2 tsp. grated onion shopping list
- 2/3 cups chopped jalapeno peppers shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. pepper shopping list
- 1 egg shopping list
- 2 tbsp. salad oil shopping list
- 3 tbsp. mayonnaise shopping list
- 3/4 tsp. prepared mustard shopping list
- lemon wedges (opt.) shopping list
How to make it
- Finely slice zucchini and carrot; pat dry with paper towels. In bowl mix zucchini and carrot and next 7 igredients, shape into round cakes. Brown in skillet with salad oil until nicely browned on both sides, 8 to 10 minutes. Serve with topping made by mixing mayonnaise and mustard. Lemon wedges can be served if desired

Oh this looks gooooood. I have one question though and that is, should the zucchini and carrot be shredded instead of sliced? I love your recipe and will be trying it very soon.
