How to make it

  • Rinse the chicken and pat dry.
  • Place a layer of sliced onions in the bottom of a roasting pan. Dip the chicken in the melted butter, then roll-coat the chicken with corn meal and place on top ofthe onions. Sprinkle remaining corn meal over the top of the chicken.
  • Season with parsley, basil, clove, salt & pepper to taste. (don't be afraid of using too much clove)
  • Pour enough water into the roaster to cover the onions. Cover and roast at 400° for 1-1/2 to 2 hours, or until chicken is tender.

    MY extreme apologies!!!!! I went to give you a 5 rating, and hit the wrong key. This is recipe is a 5 all day long. I will look into seeing if I can change the 4 to a 5. Again, I am so sorry. Patti
