Medieval English Glove Chicken

- 2-1/2 Lbs Boneless chicken breast or 3 Lbs Boned chicken breast shopping list
- 2-3 Lg onions Sliced, 1/8" thick shopping list
- 1/2 to 3/4 Cup cornmeal shopping list
- 3/4 Stick butter, melted shopping list
- Chopped parsley to Taste shopping list
- Chopped basil to Taste shopping list
- Chopped/crushed cloves to Taste shopping list
- salt & pepper to Taste shopping list
- water shopping list
How to make it
- Rinse the chicken and pat dry.
- Place a layer of sliced onions in the bottom of a roasting pan. Dip the chicken in the melted butter, then roll-coat the chicken with corn meal and place on top ofthe onions. Sprinkle remaining corn meal over the top of the chicken.
- Season with parsley, basil, clove, salt & pepper to taste. (don't be afraid of using too much clove)
- Pour enough water into the roaster to cover the onions. Cover and roast at 400° for 1-1/2 to 2 hours, or until chicken is tender.
