Ingredients
  • 2-1/2 Lbs Boneless Chicken Breast or 3 Lbs Boned Chicken Breast
  • 2-3 Lg Onions Sliced, 1/8" thick
  • 1/2 to 3/4 Cup Cornmeal
  • 3/4 Stick Butter, melted
  • Chopped Parsley to Taste
  • Chopped Basil to Taste
  • Chopped/crushed Cloves to Taste
  • Salt & Pepper to Taste
  • Water

Directions
  1. Rinse the chicken and pat dry.
  2. Place a layer of sliced onions in the bottom of a roasting pan. Dip the chicken in the melted butter, then roll-coat the chicken with corn meal and place on top ofthe onions. Sprinkle remaining corn meal over the top of the chicken.
  3. Season with parsley, basil, clove, salt & pepper to taste. (don't be afraid of using too much clove)
  4. Pour enough water into the roaster to cover the onions. Cover and roast at 400° for 1-1/2 to 2 hours, or until chicken is tender.
