Harira soup

- 1.5 lbs skinless chicken wings thighs or drumsticks. shopping list
- 5 celery sticks chopped shopping list
- 1 red onion peeled and chopped shopping list
- 1.5 cup red lentil soaked in water shopping list
- 3 tablespoons virgin oil oil shopping list
- 1 can 28oz chopped tomaotoes shopping list
- 1 can cooked garbanzo beans shopping list
- 3/4 cup chopped flatleaf parsely shopping list
- 1 cup chopped cilantro shopping list
- 1/2 teaspoon each blackpepper and cayenne pepper shopping list
- 3/4 teaspoon ground cinammon shopping list
- 1,25 teaspoons ground ginger shopping list
- 1 lemon shopping list
- 1 heaping teaspoon tumeric shopping list
- sea salt to taste shopping list
- 2 cups vermicelli pasta shopping list
- 5-6 cups water shopping list
How to make it
- place chicken,onions,celery,all the spices and olive oil,sir frequently for 5 minutes. save the juice of the crushed can of tomatoes and add the crushed parts only, cover pot simmer for 15 minutes
- add tomato juice and 5 cups water and lentils. bring to boil and simmer for 35 minutes.. drain garbanzo beans and add to the cooking mixture,bring to boil and cook for 3 minutes,add vermicelli
- and lemon juice. turn heat to low and cook till vermicelli is done
- about 10 minutes.
- ladle into soup dishes and garnish with chopped cilantro leaves
- and little drizzle of extra virgin olive oil
