Mission Inns Tomato Basil Soup Recipe

Ingredients
  • 8 oz Tomato Puree
  • 8 oz Diced Tomatoes
  • 1 tablespoon dry Basil
  • 1 quart Water
  • 16 oz Heavy Cream
  • 1 tablespoon Corn Starch
  • Salt to taste
  • Fresly ground pepper to taste
  • 1 cup Sugar
  • 4 oz freshly grated Parmesan - Recipe noted to use only good quality freshly grated parmesan. Parmesan in the round box is too salty and does not give the creamy texture needed to achieve the soup's desired consistancy.

Directions
  1. In a large saucepan over high heat compine tomato puree, diced tomatoes, basil and water. Boil mixture 30 minutes.
  2. Stir cornstarch into a little bit of the tomato mixture to dissolve. Pour cornstarch mixture into saucepan.
  3. Stir in cream and salt and pepper.
  4. Stir in sugar and cheese

I already make a soup like this. I use individual ovenproof soup bowls, Cover with the Garlic toast and sprinkle with cheese...great post!
