- 4 salmon steaks,thick cut(do not skin,leave it on) shopping list
- 4 Tablespoons butter,melted shopping list
- 2 Tablespoons fresh lemon juice shopping list
- ~Sauce~ shopping list
- 1 green onion,chopped,fine shopping list
- fresh tarragon leaves,small handful,chopped,fine shopping list
- 3 Tablespoon white wine vinegar shopping list
- 1 Fresh egg shopping list
- 1 teaspoon Dijon mustard shopping list
- 1 Tablespoon fresh lemon juice shopping list
- 1 Tablespoon tomato paste(gives a nice color) shopping list
- 1 Cup butter,hot shopping list
- Chopped fresh herbs(your choice) shopping list
How to make it
- Pat salmon dry,bush each side with butter,drizzle with lemon juice.
- Place in baking dish,bake in a 375 degree oven for about 7 minutes,turn carefully and brush with pan drippings.
- Bake for another 5 minutes(do not cook to long)
- Combine the green onion,tarragon and vinegar in saucepan.
- Boil until reduced to about 2 teaspoons,to really intensify the flavor.
- With blender going combine the onion mixture,egg,mustard,lemon juice and tomato paste.
- Slowly drizzle in the hot butter,and process until thick and smooth.
- Serve Salmon steaks with the sauce,buttered and dilled,small red potatoes,wakame salad,fresh lemon slices.
