How to make it

  • Pat salmon dry,bush each side with butter,drizzle with lemon juice.
  • Place in baking dish,bake in a 375 degree oven for about 7 minutes,turn carefully and brush with pan drippings.
  • Bake for another 5 minutes(do not cook to long)
  • Combine the green onion,tarragon and vinegar in saucepan.
  • Boil until reduced to about 2 teaspoons,to really intensify the flavor.
  • With blender going combine the onion mixture,egg,mustard,lemon juice and tomato paste.
  • Slowly drizzle in the hot butter,and process until thick and smooth.
  • Serve Salmon steaks with the sauce,buttered and dilled,small red potatoes,wakame salad,fresh lemon slices.
