Ingredients

How to make it

  • Cut eggplant into 1/2-inch cubes and place in skillet in melted butter.
  • Cover and cook over medium heat for about 6 minutes. Remove eggplant.
  • Place crumbled sausage, onion and garlic in skillet and saute, stirring, until meat is browned.
  • Add parsley, celery leaves, seasonings and tomato sauce.
  • Cook over medium heat for 5 minutes, stirring constantly.
  • Stir in eggplant.
  • Put into pie shell and bake in 375 degree oven for 45 minutes or until pie is golden brown.
  • Sprinkle with mozzarella and bake for a few additional minutes until cheese melts.
  • Let stand for 5 to 10 minutes before serving.
  • Serve with additional tomato sauce, if desired.
