Sausage And Eggplant Pie Recipe

Ingredients

1 ready made unbaked pie shell

2 cups eggplant, cubed

1/4 cup butter

6 Italian sausage, removed from casings and crumbled

1/2 cup finely chopped onion

1 clove garlic, minced

1Tbsp chopped parsley

1/4 cup chopped celery leaves

1 tsp salt

1/4 tsp oregano

1/8 tsp pepper

1 cup tomato sauce

1/2 cup mozzarella, shredded

Directions

Cut eggplant into 1/2-inch cubes and place in skillet in melted butter.

Cover and cook over medium heat for about 6 minutes. Remove eggplant.

Place crumbled sausage, onion and garlic in skillet and saute, stirring, until meat is browned.

Add parsley, celery leaves, seasonings and tomato sauce.

Cook over medium heat for 5 minutes, stirring constantly.

Stir in eggplant.

Put into pie shell and bake in 375 degree oven for 45 minutes or until pie is golden brown.

Sprinkle with mozzarella and bake for a few additional minutes until cheese melts.

Let stand for 5 to 10 minutes before serving.

Serve with additional tomato sauce, if desired.
