Sausage and Eggplant Pie

- 1 ready made unbaked pie shell shopping list
- 2 cups eggplant, cubed shopping list
- 1/4 cup butter shopping list
- 6 italian sausage, removed from casings and crumbled shopping list
- 1/2 cup finely chopped onion shopping list
- 1 clove garlic, minced shopping list
- 1Tbsp chopped parsley shopping list
- 1/4 cup chopped celery leaves shopping list
- 1 tsp salt shopping list
- 1/4 tsp oregano shopping list
- 1/8 tsp pepper shopping list
- 1 cup tomato sauce shopping list
- 1/2 cup mozzarella, shredded shopping list
How to make it
- Cut eggplant into 1/2-inch cubes and place in skillet in melted butter.
- Cover and cook over medium heat for about 6 minutes. Remove eggplant.
- Place crumbled sausage, onion and garlic in skillet and saute, stirring, until meat is browned.
- Add parsley, celery leaves, seasonings and tomato sauce.
- Cook over medium heat for 5 minutes, stirring constantly.
- Stir in eggplant.
- Put into pie shell and bake in 375 degree oven for 45 minutes or until pie is golden brown.
- Sprinkle with mozzarella and bake for a few additional minutes until cheese melts.
- Let stand for 5 to 10 minutes before serving.
- Serve with additional tomato sauce, if desired.
