PASTA SHELLS WITH BROCCOLI RABE AND CHICK-PEAS

- Ingredients: shopping list
- 4 cups chopped washed trimmed broccoli rabe shopping list
- 1 Tablespoon + 1 teaspoon olive oil shopping list
- 1 medium onion, coarsely chopped shopping list
- ½ cup low-sodium vegetable broth shopping list
- 2 garlic cloves, minced shopping list
- ¼ tsp. salt shopping list
- ¼ tsp. black pepper freshly ground shopping list
- 8 -oz rinsed drained canned chick-peas shopping list
- 1 tsp. fresh lemon juice shopping list
- 6-oz medium pasta shells shopping list
- 1 ½ Tbs. parmesan cheese freshly ground shopping list
How to make it
- 1)In a large saucepan, bring 2-inches of water to a boil. Arrange broccoli rabe on steamer rack; place in pan steam 5 minutes, until tender.
- 2)Place large non-stick skillet over medium heat 30 seconds; heat oil 30 seconds more. Add onion and cook, stirring frequently, 5 minutes, until soft. Add broccoli rabe, broth, garlic, salt and pepper; cook, stirring occasionally, until most of liquid has evaporated. Add chick-peas and juice; cook, stirring, 1 minute. Remove from heat and keep warm.
- 3)Meanwhile, in a large pot of boiling water, cook pasta shells 8-10 minutes, until tender. Drain and place in serving bowl. Add broccoli rabe mixture; sprinkle with Parmesan and toss to blend well. Divide evenly among 4 plates and serve.
